Greens and Chicken Sausage Skillet
20 mins prepServes 5
A skillet recipe featuring chicken sausage, eggs, and various vegetables, perfect for a Mother's Day brunch. It's designed for easy cleanup using a single pan.
Using Tramontina’s All in one plus pan on medium heat, add olive oil. Cook chicken sausage and break up into little pieces, occasionally stirring until fully cooked. Add onions, bell pepper, and cubanelle peppers. Season with Salt, Pepper, Cumin, and Coriander. Cook until softened, approximately 4-5 minutes. Squeeze in the juice of 1 Lime. Once peppers and onions are tender, drop the heat to medium low and add garlic, Fresno pepper, and green onions. Cook for 3 minutes. Add in spinach. Cover with the lid and allow to steam and break down, continuing to add more spinach as it wilts. Season with salt and pepper. Once spinach is almost fully wilted, add in heavy cream and stir. Make 5 small crevices in the pan. Crack an egg in each one. Season eggs with salt, pepper, and red pepper flakes. Crumble over Queso Fresco Cheese. Using the steamer plate, add tortillas. Cover. Remove tortillas once steamed. Keep the eggs covered for 3-5 minutes or until whites are cooked through. Finish off with sliced avocado, extra cheese, jalapeños, and Cilantro. For an extra hot kick, add some hot sauce. Serve with tortillas and enjoy! Happy Mother’s Day!
